Classic gyuto with a refresh on an older theme

A new take on a classic theme I’ve done in the past. It features a straight-forward, flat gyuto profile with a medium grind. The handle is a take on an older theme I did on my first Western style hidden tang handle. I had tried the wood to micarta spacer to wood look before, but the lines weren’t as refined as I would’ve liked.

I wanted to try that look again but after I learned a bit more on how to do the handles well. Here we are. Hopefully it works better this time.

Handle: Stabilized curly koa, ivory paper spacer

Make sure you are aware of the care required for carbon steels (it’s straight-forward, just wipe it after cutting something, hand wash, and wipe dry before storing. It will get a patina through normal use).
