Smaller chef’s knives with a minimal designs, in olive or black canvas micarta.
These are the last of the Prototype 1.0 knives that earlier this year as an exercise and practice in workflow and timing. The design and overall build are aimed at making a much simpler knife that performs just as well as any of our other pieces, but without the flair that can be costly to make. We have two in olive canvas micarta and two in black.
The long term goal is to start being able to offer more knives, at a more accessible price. That’ll be a project for much further down the road, but until then we can make a few prototypes to gauge the feel, cut, and aesthetic.
These ones are still all made and finished by hand, but they’re an exercise in simplified design and definitely an exercise in workflow between me and Sam in the workshop. While they’re not going to be 100% representative of the final Design Series knives, they’re a huge step forward.

Make sure you are aware of the care required for carbon steels (it’s straight-forward, just wipe it after cutting something, hand wash, and wipe dry before storing. It will get a patina through normal use).
